Two Stacks Irish Whiskey was founded in 2020 by Shane McCarthy, Liam Brogan & Donal McLynn with fresh knowledge and experience in the globalised world of spirits.

Two Stacks was inspired by the traditions of old and contemporary brands of new. Opening one of Ireland’s only independent bonding & blending facilities in 2022, with the ambition to combine these worlds together. Their unique approach to working with some of Irelands leading distilleries; selecting the finest spirit distilled across the Island  allows them to create incredible expressions of whiskey never crafted nor tasted before. They continue to build their reputation on top of three key fundamentals and to help shape the future in Irish whiskey: Transparency, Creativity and Innovation.

Irish Pot Still is characterized by its unique mash bill that includes both malted and un-malted barley. Aged in bourbon and sherry casks, this Pot Still whiskey offers a rich, spicy depth with the signature creamy texture of Ireland’s most traditional style. 

Traditionally, Irish whiskey, unless labelled as Single Malt, was crafted from a blend of cereals like oat, rye, wheat, and corn. Pot Still Whiskey, once globally acclaimed for its quality and uniqueness, derives its distinct character from un-malted barley, which imparts a unique green apple spice to the spirit. Finishing Two Stacks Double Barrel Pot Still in American Rye casks amplifies these spice notes, allowing the Pot Still spirit to truly shine.

Tasting Notes:

Nose: Green apple, spice, honey, and toasted cereal

Palate: Rich and creamy with hints of pepper, nuts, and orchard fruits

Finish: Spicy and lingering with a touch of sweetness
